Drift is the lobby bar of 1 Hotel South Beach on Collins Avenue, pouring wine and seasonal cocktails with bites until 11 PM. The cocktails use second-life ingredients: citrus peels turned into salt, spent espresso infused into tequila, leftover produce made into syrups. On Fridays the hotel's DJ spins from the couch.
